Our Fine ages in barrel in a system called a perpetual solera where we bottle from the oldest barrel and transfer the younger spirit across the barrels (a most enjoyable Central Otago winter’s job with the siphon hose!) ensuring consistency and maximum time in barrel. It has a fully developed, golden amber colour and drinks similarly to a fine brandy or Cognac, with the alcohol being 41%.
