Felton Road FINE

Our Fine (pronounced feen) is made from 100% Pinot Noir lees that we have distilled locally by a friend who grew up with distilling; learning from his father, uncles and grandfather in Germany. Joerg imported a state of the art 150 L fractionated column German pot still (Christian CARL) and is making very fine quality Eau de Vie from the abundance of fruit we have in Central Otago. Joerg’s previous job was a 747 captain: his fastidious attention to detail is amply displayed in the very high-quality spirit he obtains from our lees.   We hand bottle only a small amount each year which allows us to gradually increase our stocks and average time in barrel. The current bottling has been aged for up to eighteen years in barrel and is a blend of vintages from a perpetual solera system of ageing and bottling. The alcohol is usually around 41-43%.   The making of Fine was inspired by my time at Domaine de L’Arlot in 1996 and seeing (and tasting!) other Burgundy domaines commonly making either Marc de Bourgogne or Fine de Bourgogne (sometimes both), from what is essentially a by-product of Pinot Noir winemaking. It is consistent with our environmental and sustainability philosophies of minimising waste and maximising all opportunities.
